Light aromas of green apple and mirabelle plum and an intense yeast flavour. Fresh, fine perlage on the palate thanks to 4 years of yeast ageing, with an early acidity and minerality. Goes well with aperitifs, starters and fish dishes.

Seven months on the lees in the tank after the first fermentation, bottling for traditional bottle fermentation and four years on the lees in the bottle.
